  • 2 medium30 gGreen onionsthinly sliced
  • 3 cloves9 gGarlicminced
  • ¾ tsp2 gPaprika (sweet or smoked)
  • 1 tbsp15 gLemon juice
  • 2¼ tsp10 gOlive oil
  • 1½ tbsp20 gUnsalted buttersoftened
  • ½ tsp1 gBlack pepper
  • ⅛ tsp1 gSalt

Steps

  1. Prepare everything first: chop the shrimp, mince the garlic, slice the green onion and tomato, shred the cheddar and soften the butter.
  2. Heat the olive oil in a large skillet over medium-high heat. Add the garlic and cook 30 seconds until fragrant.
  3. Add the shrimp, paprika, salt and black pepper. Cook, stirring, 2 to 3 minutes until the shrimp are pink and opaque. Stir in the lemon juice and green onion, then transfer the shrimp filling to a bowl and wipe out the skillet.
  4. Lay out the bread slices. Spread the mustard over one side of all 8 slices.
  5. On 4 mustard-coated slices, layer half of the cheddar, then the shrimp filling, the tomato slices and the remaining half of the cheddar. Top with the other 4 slices, mustard side down.
  6. Spread the butter thinly on the outsides of the sandwiches, using half for the tops and the remaining half for the bottoms.
  7. Set the skillet over medium-low heat. Cook the sandwiches, two at a time, 3 to 4 minutes per side, pressing gently with a spatula, until the bread is golden and the cheddar melts.
  8. Cut each melt in half and serve hot.
