- 2 large100 gEggsseparated
- 1 tsp4 gVanilla extract
- 2 tbsp30 gUnsalted buttermelted
- 1¾ tsp8 gCanola oil
- 1⅔ cups200 gRaspberries
- 1 container (6 oz)170 gPlain Greek yogurt, nonfat
- 2 tbsp40 gMaple syrup
Steps
- Prepare the banana first: mash half of it in a large bowl and slice the remaining half for topping. Separate the egg into yolks and whites.
- In a medium bowl, sift the unsweetened cocoa powder, then whisk in the flour, sugar, baking powder, baking soda and salt until the cocoa is evenly blended.
- To the mashed banana, whisk in the buttermilk, cooled espresso, egg yolks, vanilla and melted butter.
- In a clean bowl, whip the egg whites to soft peaks.
- Stir the cocoa-flour mixture into the banana mixture until just combined, with a few lumps left, then gently fold in the whipped egg whites to keep the batter airy. Rest 5 minutes.
- Heat a skillet or griddle over medium-low heat and brush with one quarter of the canola oil.
- Pour in the batter by scant 1/3-cup portions and cook 2 to 3 minutes, until bubbles form and the edges look set, then flip and cook 1 to 2 minutes more, until the centers spring back and reach 160°F (71°C).
- Repeat with the remaining batter in three more batches, brushing the skillet with another quarter of the canola oil before each batch.
- Stir the maple syrup into the Greek yogurt.
- Serve the pancakes topped with the sweetened Greek yogurt, the raspberries and the sliced banana.
