- 1¾ tsp8 gBaking powder
- ½ tsp2 gBaking soda
- ¼ tsp1.5 gSalt
- 1 medium118 gBananawell mashed
- 1 container (6 oz)170 gPlain Greek yogurt, nonfat
- 1 cup (240 ml)240 gMilk, 2%
- 2 large100 gEggs
- 1 tsp4 gVanilla extract
- 1½ tbsp20 gUnsalted buttermelted and cooled slightly
- 1¾ tsp8 gCanola oil
- 1½ cups sliced250 gStrawberriessliced
- 1 cup120 gRaspberries
- 2 tbsp40 gMaple syrup
Steps
- Prepare the toppings first: toss the strawberries and raspberries together in a small bowl and set aside.
- In a large bowl, whisk the flour, unsweetened cocoa powder, sugar, baking powder, baking soda and salt until no cocoa powder streaks remain.
- In a second bowl, whisk the mashed banana, Greek yogurt, milk, eggs and vanilla until smooth, then whisk in the melted butter.
- Pour the wet banana mixture into the cocoa-flour mixture and fold gently with a spatula just until no dry flour shows; a few lumps keep the pancakes fluffy. Let the batter rest 5 minutes while the skillet heats.
- Heat a large nonstick skillet over medium-low heat and brush it with one quarter of the canola oil.
- Pour about 1/4 cup of batter per pancake into the skillet and cook 2 to 3 minutes, until bubbles form on top and the edges look set, then flip and cook 1 to 2 minutes more until the centers spring back when pressed.
- Repeat with the remaining batter, brushing the skillet with another quarter of the canola oil before each of the next three batches, so all the oil is used; keep cooked pancakes warm on a plate under a clean towel.
- Divide the pancakes among 4 plates, spoon the strawberries and raspberries over them and drizzle with the maple syrup.
