Steps

  1. Make the quick pickles first: stir the cider vinegar, water, sugar and half of the salt until dissolved, add the cucumber, and let stand at least 20 minutes while you make the patties.
  2. Pulse the oats in a food processor until coarse, then add the chickpeas and great northern beans and pulse until mostly mashed with some texture left.
  3. Transfer to a bowl and stir in the onion, garlic, dill, paprika, cumin, black pepper, the remaining half of the salt and the egg. Shape into 4 patties about 3/4 inch thick and chill 10 minutes to firm up.
  4. Heat half of the olive oil in a large skillet over medium heat. Add the patties and cook 5 minutes until deeply browned.
  5. Add the remaining half of the olive oil around the patties, flip, and cook 5 minutes more until browned and the center reaches 160°F (71°C).
  6. Toast the whole-wheat bread, which stands in for burger buns, and spread the mustard over one side of each slice.
  7. Drain the pickled cucumber. Build each burger on a slice of bread with romaine, a patty, tomato and pickles, then top with a second slice and serve.
