  • 1 cup245 gPumpkin puree, canned
  • 3 dates72 gMedjool dates, pittedfinely chopped
  • ½ oz20 gChia seeds
  • 1½ tsp4 gGround cinnamon
  • ½ tsp1 gGround ginger
  • ¼ tsp0.5 gGround cardamom
  • ¼ tsp0.5 gGround nutmeg

  • ⅛ tsp1 gSalt
  • 1¼ tsp5 gVanilla extract
  • 3 tbsp48 gAlmond butter, no salt addedstirred smooth
  • 3½ tbsp whole30 gAlmondssliced

Steps

  1. Make the oat milk first: blend the 40 g portion of oats with the cold water on high for 30 seconds until smooth and milky. Set aside the remaining 240 g of oats for the porridge.
  2. Toast the almonds in a dry medium pot over medium heat, stirring, for 3 to 4 minutes until golden and fragrant, then tip them onto a plate.
  3. Pour the oat milk into the same pot and whisk in the pumpkin, cinnamon, ground ginger, cardamom, nutmeg, cloves and salt.
  4. Bring to a gentle simmer over medium heat, then stir in the remaining 240 g of oats and the chopped dates.
  5. Simmer, stirring often, for 6 to 8 minutes until the oats are tender and the dates have melted into the porridge.
  6. Take the pot off the heat and stir in the chia seeds and vanilla; let stand 2 minutes so the chia seeds thicken the porridge, adding a splash of water if you like it looser.
  7. Spoon the porridge into four bowls, swirl a quarter of the almond butter into each bowl, and scatter a quarter of the toasted almonds over each.
