Steps
- Prepare first: chop the red onion and cilantro, mince the garlic, thaw the frozen corn kernels, pat the black beans dry, beat the egg and slice the tomato.
- Heat half the olive oil in a large skillet over medium-high heat. Add the red onion and the thawed corn kernels and cook until the corn kernels char in spots, about 5 minutes.
- Stir the garlic, cumin and chili powder into the onion and corn kernels for 30 seconds, then scrape the mixture into a large bowl and let it cool 5 minutes. Wipe out the skillet.
- Add the black beans to the bowl and mash with a fork until mostly smooth with some whole beans left.
- Stir in the breadcrumbs, the egg, the salt and half the cilantro until the mixture holds together. Shape into 4 patties about 3/4 inch thick and chill 10 minutes to firm up.
- While the patties chill, mash the avocado with the lime juice and the remaining half of the cilantro to make the smashed avocado.
- Heat the remaining half of the olive oil in the skillet over medium heat. Cook the patties 5 to 6 minutes per side until deeply browned and crisp and the centers reach 160°F (71°C).
- Toast the whole-wheat bread slices in the skillet or a toaster.
- Spread the smashed avocado on 4 slices of toast, add a patty and the tomato slices, and top with the remaining 4 slices. Serve hot.
