- 3½ oz100 gPlain Greek yogurt, nonfat
- 2⅛ tsp12 gMiso paste
- 2 tsp10 gLime juice
- 8 slices256 gWhole-wheat bread8 slices
- 1⅔ cups chopped80 gRomaine lettuceleaves separated
- 1½ medium200 gTomatoessliced
- ½ medium60 gRed onionthinly sliced into rings
Steps
- Press the tofu between towels under a heavy pan for 10 minutes, then pat it dry.
- Meanwhile, make the miso mayo: in a small bowl, whisk the miso paste with the lime juice until smooth, then stir in the Greek yogurt. Chill until serving.
- Prepare the toppings: wash and separate the romaine leaves, slice the tomato and cut the red onion into thin rings; set aside.
- In a large bowl, crumble the tofu finely. Mash the edamame roughly and add it to the tofu.
- Add the breadcrumbs, beaten egg, green onion, garlic, ginger, soy sauce and black pepper; mix well and let rest 5 minutes so the crumbs absorb moisture.
- Shape the mixture firmly into 4 patties about 3/4 inch thick.
- Heat half the canola oil in a large skillet over medium heat. Cook the patties 4 to 5 minutes until deeply golden, then add the remaining half of the canola oil around them, flip and cook 4 to 5 minutes more, until the centers reach 160°F (71°C).
- Toast the whole-wheat bread slices while the patties finish.
- Spread the miso mayo on the toast, then build each burger with romaine, a patty, tomato and red onion, and top with a second slice.
