Steps
- Prep first: finely mince 30 g of the red onion for the patties and thinly slice the remaining 80 g for topping. Slice the tomato and separate the romaine leaves.
- Make the sauce: stir together the Greek yogurt, lime juice and hot sauce in a small bowl and chill until serving.
- Pulse the oats in a blender or food processor into a coarse flour.
- In a large bowl, mash the black beans with a fork or potato masher until mostly smooth with some chunks.
- Add the ground oats, beaten egg, minced red onion, garlic, cumin, smoked paprika, salt and black pepper to the beans and mix well. Rest the mixture 10 minutes so the oats firm it up, then divide into 8 balls.
- Toast the bread slices in a dry large skillet or toaster and set aside.
- Heat half of the canola oil in the large skillet over medium-high heat. Add 4 balls, then press each firmly with a sturdy spatula into a thin patty about 4 inches wide.
- Cook 3 to 4 minutes until deeply browned and crisp, flip and cook 3 minutes more, until the centers reach 160°F (71°C). Move to a plate.
- Add the remaining half of the canola oil to the skillet and smash and cook the last 4 balls the same way.
- Build each burger: spread the yogurt sauce on a toasted slice of bread, add romaine, two stacked patties, tomato and sliced red onion, and top with a second toasted slice. Serve hot.
