  • 3½ tbsp grated20 gFresh gingerpeeled and grated
  • 3 tbsp45 gLow-sodium soy sauce
  • 2 tbsp30 gHoisin sauce
  • 1 tbsp15 gApple cider vinegar
  • ⅓ cup90 gWater
  • 1¾ tsp8 gToasted sesame oil
  • 2 medium30 gGreen onionssliced
  • 2¾ tsp8 gSesame seedstoasted

Steps

  1. Bring a large pot of water to a boil for the pasta.
  2. Make the sauce: in a small bowl, whisk the water, low-sodium soy sauce, hoisin sauce, apple cider vinegar, toasted sesame oil and about 2 teaspoons (5 g) of the cornstarch. Set the sauce aside.
  3. Pat the tofu dry, then toss it in a bowl with the remaining cornstarch until evenly coated.
  4. Cook the whole-wheat pasta in the boiling water 1 minute less than the package says, adding the edamame for the last 3 minutes. Drain the pasta and edamame and set aside.
  5. Meanwhile, heat half of the canola oil in a large skillet over medium-high heat. Add the tofu in one layer and cook, turning occasionally, until golden and crisp on all sides, 8 to 10 minutes. Move the tofu to a plate.
  6. Add the remaining half of the canola oil to the skillet. Add the yellow onion, red bell pepper and green bell pepper and stir-fry until crisp-tender and lightly charred, 4 to 5 minutes.
  7. Add the garlic and ginger and stir-fry until fragrant, about 30 seconds.
  8. Stir the sauce, pour it into the skillet and let it bubble until glossy and slightly thickened, about 1 minute.
  9. Add the drained pasta and edamame and the crispy tofu, and toss over the heat until everything is coated and hot, 1 to 2 minutes.
  10. Serve topped with the sliced green onions and toasted sesame seeds.
