- 1 tbsp15 gLemon juice

Steps
- Grate the zucchini, toss it with a small pinch of the salt, let it sit 5 minutes, then squeeze it hard in a clean towel to remove the liquid.
- While the zucchini sits, grate the carrot, chop the red onion and mince the garlic.
- In a large bowl, mash the chickpeas with a fork or potato masher until mostly broken down with some small pieces left.
- Add the squeezed zucchini, carrot, red onion, garlic, oats, beaten egg, cumin, paprika, black pepper and all but a pinch of the remaining salt; mix well.
- Let the mixture rest 10 minutes so the oats absorb moisture, then shape it into 4 patties about 3/4 inch thick.
- While the mixture rests, mash the avocado with the lemon juice and the last pinch of salt to make the smashed avocado.
- Heat half of the olive oil in a large skillet over medium heat. Add 2 patties and cook 4 to 5 minutes per side until deep golden and crisp, until the centers reach 160°F (71°C). Repeat with the remaining half of the olive oil and the other 2 patties.
- Toast the whole-wheat bread slices in the hot skillet or a toaster.
- Spread the smashed avocado on 4 slices of toast, add a patty and the tomato slices, then top with the remaining 4 slices and serve.
