  • 3 dates72 gMedjool dates, pittedfinely chopped
  • ⅓ cup30 gSweetened shredded coconut
  • ½ cup40 gOld-fashioned rolled oats
  • ½ oz12 gChia seeds

Steps

  1. Finely chop the pecans and the dates, and line a plate with parchment.
  2. In a medium bowl, mash the dates into the almond butter with a fork until they form a sticky paste, then stir in the vanilla and salt.
  3. Add the oats, the chia seeds, the chopped pecans and half of the shredded coconut to the bowl, and mix until everything holds together when pressed; if it feels dry, work it with your hands for a minute.
  4. Roll the mixture into 12 balls, about a tablespoon each.
  5. Spread the remaining half of the shredded coconut on a small plate and roll each ball in it to coat.
  6. Set the bites on the lined plate and chill for 30 minutes until firm. Serve 3 bites per person; keep leftovers covered in the fridge up to 1 week.
