  • ¾ tsp2 gOnion powder
  • ½ tsp3 gSalt
  • ½ tsp1 gBlack pepper
  • 1 tbsp14 gOlive oil
  • 8 slices256 gWhole-wheat bread8 slices, or 4 whole-grain buns split
  • 1⅔ cups chopped80 gRomaine lettuceleaves separated
  • 1½ medium200 gTomatoessliced
  • ½ medium60 gRed onionthinly sliced into rings
  • 2 tbsp30 gYellow mustard

Steps

  1. Prep the toppings first: separate the romaine leaves, slice the tomato and slice the red onion into thin rings. Set aside.
  2. In a large bowl, stir together the egg, garlic, Worcestershire sauce, paprika, onion powder, salt and black pepper. Stir in the breadcrumbs and let sit 2 minutes.
  3. Add the ground chicken and mix gently with your hands just until combined. With damp hands, shape into 4 patties about 3/4 inch thick, pressing a slight dimple in each center.
  4. Heat a large skillet over medium heat. Toast the bread (or cut sides of the buns) in the dry skillet for 1 to 2 minutes until golden, then set aside.
  5. Add the olive oil to the skillet over medium heat. Cook the patties 5 to 6 minutes per side without pressing, until browned and the centers reach 165°F (74°C). Rest 3 minutes.
  6. Spread the mustard on the toasted bread. Layer each bottom with romaine, a patty, tomato slices and red onion rings, then cap with the top and serve.
