  • 4 dates96 gMedjool dates, pittedpitted and chopped
  • 2 tbsp32 gAlmond butter, no salt addedstirred well
  • 1⅛ tsp3 gGround cinnamon
  • 1 tsp4 gVanilla extract
  • ⅛ tsp0.5 gSalt

Steps

  1. Line a small loaf pan or 6-inch square container with parchment, leaving some overhang for lifting.
  2. Chop the walnuts and pecans, then set aside about one quarter of the walnuts for the topping and keep the remaining three quarters for the bar mixture.
  3. If the dates feel dry, soak them in warm tap water for 5 minutes, then drain and pat dry.
  4. Mash the dates with a fork in a bowl, or chop them very finely on a board, until they form a sticky paste.
  5. Add the almond butter, cinnamon, vanilla and salt to the date paste and stir until evenly combined.
  6. Stir in the pecans and the three quarters of the walnuts kept for the mixture until everything holds together when squeezed.
  7. Press the mixture firmly and evenly into the lined pan, then scatter the reserved quarter of the walnuts on top and press them in.
  8. Chill for 1 hour until firm, then lift out by the parchment and cut into 4 bars. Keep leftovers in the fridge.
