  • 1 tsp2 gGround cumin
  • 1 tsp1 gDried oregano
  • ¼ cup60 gWater

Steps

  1. Make the avocado sauce: blend or mash the avocado with the Greek yogurt, lime juice, half the cilantro and a pinch of the salt until smooth. Set aside.
  2. Heat half the olive oil in a large skillet over medium heat. Add the onion and jalapeño and cook 5 minutes until soft, then stir in the garlic, smoked paprika, cumin and oregano for 30 seconds.
  3. Add the pinto beans and water, simmer 3 minutes, then mash roughly with a fork and season with half the remaining salt. Scrape the beans into a bowl and wipe the skillet.
  4. Heat the remaining olive oil in the skillet over medium-low heat. Add the eggs with the rest of the salt and the black pepper and stir gently until softly set and no longer runny, 160°F (71°C).
  5. Warm the tortillas in a dry skillet or wrapped in a towel in the microwave until pliable.
  6. Spread each tortilla with the beans, top with the eggs, cabbage, queso fresco, a spoonful of the avocado sauce and the remaining cilantro. Fold in the sides, roll up tightly and serve with any remaining avocado sauce.
