  • 1 cup shredded100 gCheddar cheeseshredded
  • 1 cup diced150 gAvocado
  • 3½ oz100 gPlain Greek yogurt, nonfat
  • 2 tbsp30 gLime juice
  • ½ cup chopped8 gFresh cilantrochopped
  • 1½ tbsp20 gCanola oil
  • ¼ cup60 gWater
  • 2 tsp4 gGround cumin
  • 1¾ tsp4 gPaprika (sweet or smoked)smoked
  • 1 tsp3 gGarlic powder
  • ¾ tsp4 gSalt
  • ½ tsp1 gBlack pepper

Steps

  1. Make the avocado sauce first: mash the avocado with the Greek yogurt, lime juice, cilantro and a quarter of the salt until smooth; chill until serving.
  2. Heat half of the canola oil in a large skillet over medium heat. Add the sweet potato and onion and cook 3 minutes, then add the water, cover and steam 6 minutes until the sweet potato is just tender.
  3. Uncover, push the vegetables aside and add the ground turkey. Season with the cumin, smoked paprika, garlic powder, black pepper and half of the salt. Cook, breaking up the turkey, until browned and it reaches 165°F (74°C), about 8 minutes. Transfer the filling to a bowl and wipe out the skillet.
  4. Lay out half of the corn tortillas. Sprinkle the cheddar over them, top with the turkey filling, sprinkle with the remaining quarter of the salt, and cover with the remaining tortillas.
  5. Brush the skillet with a little of the remaining canola oil over medium heat. Cook the quesadillas two at a time, 2 to 3 minutes per side, until crisp and the cheese melts, using the rest of the oil between batches.
  6. Cut each quesadilla in half and serve warm with the avocado sauce.
