- 2 tbsp25 gGranulated sugar
- 1¾ tsp8 gBaking powder
- ½ tsp2 gBaking soda
- ¼ tsp2 gSalt
- 1¼ cups (300 ml)300 gWhole milk
- 1 tbsp15 gApple cider vinegar
- 2 large100 gEggsbeaten
- 1½ tbsp20 gCanola oil
- 1¼ tsp5 gVanilla extract
- 2 medium236 gBananasliced into thin coins
- ¼ cup64 gPeanut butter, no salt added
- 2 tbsp40 gMaple syrup
- 1½ tbsp20 gWaterwarm
- 2⅛ tsp10 gUnsalted butter
Steps
- Stir the cider vinegar into the whole milk and let it stand 5 minutes to thicken.
- Sift the unsweetened cocoa powder into a large bowl, then add the flour, sugar, baking powder, baking soda and salt and whisk until the dry mixture is an even brown.
- Whisk the egg, canola oil and vanilla into the soured milk, then pour this wet mixture into the cocoa-flour mixture and stir just until no dry streaks remain; a few lumps keep the pancakes fluffy. Rest the batter 5 minutes.
- Meanwhile, make the drizzle: in a small bowl, whisk the peanut butter, maple syrup and warm water until smooth and pourable.
- Heat a nonstick skillet over medium-low heat and melt about one quarter of the butter.
- Pour scant 1/4-cup portions of the cocoa batter into the skillet and press a few banana coins into the top of each.
- Cook until bubbles form and the edges look set, about 2 minutes, then flip and cook 1 to 2 minutes more, until the centers spring back and reach 160°F (71°C).
- Repeat with the remaining batter and banana coins, adding another quarter of the butter for each batch until all the butter is used.
- Stack the pancakes on plates and spoon the peanut butter drizzle over the top.
