  • 2¼ tsp6 gChili powder
  • 2 tsp4 gGround cumin
  • 3 cloves9 gGarlicminced
  • ¾ tsp4 gSalt
  • ½ tsp1 gBlack pepper

Steps

  1. Set the frozen corn kernels out to thaw. Rub the flank steak with the chili powder, cumin, half of the garlic, half of the salt and the black pepper; let it sit while you cook the rice.
  2. Bring the water to a boil in a saucepan, add the rice and one quarter of the salt, cover, and simmer on low for 18 minutes; rest off the heat 5 minutes.
  3. Make the salsa: in a bowl stir together the tomato, red onion, jalapeño, half of the cilantro, half of the lime juice and the final quarter of the salt.
  4. Heat half of the canola oil in a large skillet over medium-high heat and sear the steak 4 to 6 minutes per side until it reaches 145°F (63°C); rest it 3 minutes, then slice thinly against the grain.
  5. In the same skillet, heat the remaining half of the canola oil, add the thawed corn kernels and the remaining half of the garlic, and cook 3 minutes until the corn is lightly charred; stir in the black beans and warm through, about 2 minutes.
  6. Fluff the rice with the remaining half of the cilantro and one quarter of the lime juice.
  7. Divide the rice among four bowls, top with the charred corn and black beans, the sliced steak, the salsa and the avocado, and drizzle with the remaining quarter of the lime juice.
