  • ½ cup shredded60 gCheddar cheese4 thin slices or shredded
  • 4 oz120 gPlain Greek yogurt, nonfat
  • 1 tbsp15 gYellow mustard
  • 1 tbsp15 gLime juice
  • 1 tsp3 gGarlic powder
  • 1 tsp2 gGround cumin
  • 1¼ tsp3 gPaprika (sweet or smoked)
  • ¾ tsp4 gSalt
  • ¾ tsp2 gBlack pepper

Steps

  1. Preheat the oven to 425°F (220°C).
  2. Toss the potato wedges with the olive oil, the paprika and one quarter of the salt; spread on a baking sheet and roast 30 to 35 minutes, turning once, until golden and tender.
  3. While the potatoes roast, stir the Greek yogurt, mustard and lime juice together in a small bowl to make the sauce; chill.
  4. Slice the avocado, tomato and red onion, and arrange the romaine leaves on four plates as the base.
  5. Mix the garlic powder, cumin, black pepper and the remaining three quarters of the salt in a small dish to make the seasoning.
  6. Heat a large cast-iron skillet over medium-high heat until very hot. Place 4 beef balls in the dry skillet, smash each flat with a sturdy spatula, and sprinkle with half of the seasoning.
  7. Cook 2 to 3 minutes until deeply browned and crisp at the edges, flip, top 2 patties with half of the cheddar, and cook 1 to 2 minutes more until the beef reaches 160°F (71°C). Move to a plate.
  8. Repeat with the remaining 4 beef balls, the remaining half of the seasoning and the remaining half of the cheddar.
  9. Stack two patties (one with cheddar) on each romaine base, top with the tomato, avocado and red onion, and spoon on the sauce.
  10. Serve with the roasted potato wedges.
