Steps
- Prep first: slice the onion and mushrooms, mince the garlic, cut the potato into wedges, slice the tomato and cheddar, and separate the romaine leaves.
- Toss the potato with half the olive oil and a quarter of the salt in a large skillet over medium heat, cover, and cook 15 minutes, turning occasionally, until tender and browned; move to a plate and keep warm.
- Add the remaining half of the olive oil to the skillet with the onion and cook 10 minutes until soft and golden.
- Add the mushrooms, garlic and thyme and cook 6 minutes until browned; pour in the water to loosen the browned bits, cook 1 minute more, then move to a bowl.
- While the onions cook, put the beef in a bowl and add the Worcestershire sauce, garlic powder, black pepper and the remaining three-quarters of the salt; mix gently and shape into 4 patties about 3/4 inch thick.
- Sear the patties in the same skillet over medium-high heat 4 to 5 minutes per side until they reach 160°F (71°C) inside; lay the cheddar on top in the last minute and cover to melt.
- Set each patty on romaine leaves with tomato slices, spoon the mushrooms and onions over the top, and serve with the potato wedges.
