- 4 cups sliced280 gWhite mushroomssliced
- 2½ tbsp36 gOlive oil
- 1¾ tsp10 gWorcestershire sauce
- 1 tsp1 gDried thyme
- ½ cup shredded60 gCheddar cheesesliced
- 4¼ cups chopped200 gRomaine lettucelarge leaves, washed and dried
- 2 medium240 gTomatoessliced
Steps
- Prepare first: pat the black beans dry, mince the garlic, thinly slice the onion, slice the mushrooms, slice the cheddar and tomato, and wash and dry the romaine leaves.
- In a bowl, mash the black beans with a fork, leaving some pieces whole. Stir in the egg, breadcrumbs, garlic, cumin, smoked paprika, half the salt and the black pepper. Shape into 4 patties about 3/4 inch thick and chill while you cook the topping.
- Heat one third of the olive oil in a large skillet over medium heat. Add the onion and cook, stirring often, for 12 minutes until soft and golden.
- Add another third of the olive oil and the mushrooms to the onion with the thyme and the remaining half of the salt. Cook 8 minutes until the mushrooms are browned, then stir in the Worcestershire sauce. Transfer the topping to a bowl and wipe out the skillet.
- Heat the remaining third of the olive oil in the skillet over medium heat. Cook the patties 5 minutes per side until crisp and browned; the egg-bound patties should reach 160°F (71°C) in the center.
- In the last minute, lay the cheddar on the patties and cover the skillet to melt it.
- Set each patty on romaine leaves, top with tomato slices and the mushroom-onion topping, and wrap or eat with a knife and fork.
