- 1¼ cups (300 ml)300 gPlain kefir, low-fat
- 2 large100 gEggs
- ¾ cup90 gWhole wheat flour
- 1 cup110 gAll-purpose flour
- 1¾ tsp8 gBaking powder
- ½ tsp2 gBaking soda
- ¼ tsp1.5 gSalt
- ½ tsp1 gGround nutmeg
- 1¼ tsp5 gVanilla extract
- 2 tbsp28 gUnsalted buttermelted, divided
- 1¼ cups180 gBlueberries
- ⅓ cup chopped40 gWalnutschopped
- ¼ cup80 gMaple syrup
Steps
- Melt the butter and set it aside; you will use three-quarters in the batter and the remaining quarter for the pan.
- In a large bowl, whisk the whole wheat flour, all-purpose flour, baking powder, baking soda, salt and nutmeg to make the dry mix.
- In another bowl, whisk the mashed banana, kefir, eggs, vanilla and three-quarters of the melted butter until smooth.
- Pour the banana mixture into the dry mix and stir just until no dry streaks remain; a few lumps keep the pancakes fluffy. Let the batter rest 5 minutes, then gently fold in the blueberries.
- Meanwhile, toast the walnuts in a dry nonstick skillet over medium heat for 3 to 4 minutes until fragrant, then transfer them to a small saucepan with the maple syrup and warm gently over low heat.
- Wipe out the skillet, set it over medium heat and brush it with a little of the remaining melted butter. Pour about 1/3 cup of batter per pancake and cook until bubbles form and the edges look set, about 2 to 3 minutes.
- Flip and cook about 2 minutes more until golden and the center springs back when pressed, brushing the pan with more of the remaining butter between batches until it is used up.
- Serve the pancakes stacked and drizzled with the warm walnut maple syrup.
