- ¼ cup chopped30 gWalnuts
- 1½ tbsp20 gLemon juice
- ⅓ cup grated40 gGrated Parmesandivided
- ⅔ cup150 gPart-skim ricotta
- 3⅓ cups loosely packed100 gBaby spinach
- 1 tsp1 gDried thyme
- ¼ cup25 gPlain dry breadcrumbs
- ¾ tsp5 gSaltdivided
- ½ tsp1 gBlack pepper
Steps
- Preheat the oven to 400°F (200°C) and bring the water to a boil in a large pot with half of the salt.
- Make the herb sauce: in a blender, blend the parsley, basil, walnuts, lemon juice, 4 g of the garlic (about 1 clove), half of the Parmesan and two-thirds of the olive oil with 3 tablespoons of the boiling pasta water until smooth. Set aside.
- Mince the remaining garlic.
- Cook the pasta in the boiling water for 2 minutes less than the package says, then scoop out a half cup of the pasta water and drain the pasta.
- While the pasta cooks, heat the remaining olive oil (one-third) in a large oven-safe skillet over medium-high heat. Add the mushrooms and cook without stirring for 3 minutes, then stir and cook until browned, about 4 minutes more.
- Add the onion, minced garlic and thyme to the skillet and cook until the onion softens, about 4 minutes. Stir in the spinach until wilted, then turn off the heat.
- Stir the drained pasta, the great northern beans, the herb sauce, the ricotta, the black pepper, the remaining salt and enough of the reserved pasta water into the skillet to make it saucy.
- Mix the breadcrumbs with the remaining Parmesan and scatter over the top.
- Bake uncovered until bubbling and the crumbs are golden, about 20 minutes. Rest 5 minutes before serving.
