Steps
- Bring the water and quinoa to a boil in a small pot, cover, and simmer on low for 15 minutes until the water is absorbed; spread on a plate to cool slightly.
- Meanwhile, heat half of the olive oil in a small pan over medium heat and cook the onion for 5 minutes until soft; add the garlic and cook 1 minute more.
- Preheat the oven to 400°F (200°C) and line a baking sheet with parchment.
- In a large bowl, mash the black beans with a fork, leaving some chunks.
- Add the cooked quinoa, onion and garlic, egg, breadcrumbs, cumin, paprika, salt and black pepper to the beans and mix well.
- Shape the mixture into 4 patties about 3/4 inch thick, set them on the baking sheet and brush the tops with the remaining half of the olive oil.
- Bake 20 to 25 minutes, flipping halfway, until crisp and the centers reach 160°F (71°C).
- While the patties bake, mash the avocado with the lime juice.
- Toast the whole-wheat bread slices in the oven for the last 5 minutes.
- Build each burger: a bread slice, romaine, a patty, the avocado mash and tomato slices, then a second bread slice.
