  • ½ cup chopped80 gRed onionfinely diced
  • 2 cups shredded140 gGreen cabbagethinly shredded
  • 1 cup chopped16 gFresh cilantrochopped, divided
  • 1 whole14 gJalapeñoseeded and minced
  • 2 cloves6 gGarlicminced
  • 1¾ tsp4 gPaprika (sweet or smoked)
  • 1½ tsp3 gGround cumin
  • 1 tsp1 gDried oregano
  • 1 tbsp15 gCanola oildivided
  • ¾ tsp4 gSaltdivided
  • ½ tsp1 gBlack pepper

Steps

  1. Make the yogurt lime sauce: stir the Greek yogurt with half of the lime juice, half of the cilantro and a pinch (about a quarter) of the salt. Chill until serving.
  2. In a large bowl, toss the pork with the garlic, paprika, cumin, oregano, black pepper, half of the remaining salt and the remaining half of the lime juice. Let it sit while you prep the toppings.
  3. Toss the cabbage with the red onion, jalapeño and the rest of the salt; set aside.
  4. Heat a large skillet over medium-high heat. Add the pineapple with no oil and cook 4–5 minutes, turning, until charred in spots. Transfer to a plate.
  5. Add half of the canola oil to the skillet and add half of the pork in one layer. Sear 3–4 minutes, turning once, until browned and the thickest strips reach 145°F (63°C). Move to a plate, then repeat with the remaining canola oil and pork. Rest the pork 3 minutes.
  6. Wipe the skillet and warm the corn tortillas one or two at a time, about 30 seconds per side, wrapping them in a towel to keep soft.
  7. Fill each tortilla with the cabbage mixture, pork and pineapple, spoon over the yogurt lime sauce and finish with the remaining cilantro.
