  • 2¾ cups chopped60 gKalestems removed, finely chopped
  • 2¼ tsp10 gOlive oil
  • 4 slices128 gWhole-wheat bread
  • ⅓ cup shredded40 gCheddar cheeseshredded
  • 1¼ tsp4 gSesame seeds
  • 1 tsp1 gDried thyme
  • ½ tsp1 gPaprika (sweet or smoked)
  • ⅛ tsp1 gSalt
  • ¼ tsp0.5 gBlack pepper

Steps

  1. Make the hummus: mash or blend the chickpeas with the tahini, lemon juice, garlic, water and cumin until smooth; set aside.
  2. Mix the sesame seeds, thyme and paprika in a small bowl to make a za'atar-style topping; set aside.
  3. Whisk the eggs with the salt and black pepper in a bowl.
  4. Heat half of the olive oil in a large nonstick skillet over medium heat. Add the kale and cook, stirring, 2 to 3 minutes until wilted; transfer to a plate.
  5. Lower the heat to medium-low, pour in the eggs and stir gently until softly set and cooked to 160°F (71°C), about 3 minutes; transfer to the plate with the kale and wipe out the skillet.
  6. Brush one side of each bread slice with the remaining half of the olive oil and toast oiled side down in the skillet over medium heat until crisp, about 2 minutes; flip so the toasted side faces up.
  7. Spread the hummus over the toasted sides, then top with the kale, the eggs and the cheddar.
  8. Cover the skillet and cook 2 to 3 minutes over medium-low until the cheddar melts and the bottoms are golden.
  9. Sprinkle the za'atar-style topping over the melts and serve warm.
