- ¼ tsp0.5 gGround nutmeg
- ⅛ tsp0.3 gGround cloves
- ⅛ tsp1 gSalt
- ¼ cup35 gPumpkin seeds (pepitas)

Steps
- Preheat the oven to 300°F (150°C) and line a rimmed baking sheet with parchment.
- In a large bowl, whisk the almond butter, molasses, maple syrup and canola oil until smooth.
- Whisk the cinnamon, ground ginger, nutmeg, cloves and salt into the syrup mixture.
- Add the oats and walnuts and stir until every piece is evenly coated.
- Fold in the frothy egg white until the mixture looks glossy and slightly sticky; this binds the clusters.
- Spread the granola on the sheet in an even layer about 1/2 inch thick and press it down firmly with a spatula.
- Bake 35 to 40 minutes without stirring, rotating the pan halfway, until deep golden and dry to the touch at the edges.
- Cool on the pan for at least 20 minutes without touching so it crisps into a solid sheet.
- Break the cooled granola into clusters, then toss with the pumpkin seeds and raisins. Store airtight up to 2 weeks.
