Vanilla Iced Oat Milk Latte

Ingredients

  • ⅓ cup30 gOld-fashioned rolled oats
  • 1½ cups360 gWatervery cold
  • a pinch0.3 gSalta small pinch
  • 1 tbsp24 gMaple syrup
  • ¾ tsp3 gVanilla extract
  • 4 shots120 gEspressofreshly brewed, about 4 shots, cooled

Steps

  1. Brew the espresso, pour it into a small heatproof cup and set it in the fridge to cool while you make the oat milk.
  2. Make the oat milk: put the oats, the very cold water and the salt in the blender and blend for 20 to 30 seconds, just until creamy; longer blending makes it slimy.
  3. Pour the oat mixture through a fine sieve lined with a thin kitchen towel or nut-milk bag into a pitcher, squeezing gently, and discard the pulp.
  4. Whisk the maple syrup and the vanilla into the strained oat milk until fully blended.
  5. Fill two tall glasses with ice and pour half the vanilla oat milk into each glass.
  6. Slowly pour half the cooled espresso over the oat milk in each glass so it layers, then stir before drinking.
