Steps
- Wash and dry the romaine leaves, dice the red bell pepper, slice the green onion, chop the spinach and cilantro, and beat the eggs in a bowl.
- Make the avocado sauce: mash the avocado with the Greek yogurt, lime juice, cilantro and one quarter of the salt until smooth; set aside.
- In a bowl, mix the ground turkey with the thyme, paprika, garlic powder, maple syrup, black pepper and half of the salt.
- Heat half of the olive oil in a large skillet over medium-high heat. Add the seasoned turkey and cook, breaking it into crumbles, until browned and cooked to 165°F (74°C), about 8 minutes. Move it to a plate.
- Add the remaining olive oil and the red bell pepper to the skillet and cook 3 minutes until tender. Add the spinach and cook until wilted, about 1 minute.
- Season the eggs with the remaining quarter of the salt, pour them into the skillet over medium-low heat and stir gently until softly set and cooked to 160°F (71°C), 2 to 3 minutes. Fold the turkey back in.
- Spoon the turkey and egg filling into the romaine leaves, top with the avocado sauce and sprinkle with the green onion. Serve 3 wraps per person.
