- 1½ tbsp20 gOlive oil
- 2 tsp2 gDried oregano
- ¾ tsp4 gSalt
- ½ tsp1 gBlack pepper
- 12⅔ cups3,000 gWater
Steps
- Preheat the oven to 400°F (200°C) and line a sheet pan with parchment.
- In a bowl, mix the ground turkey, egg, breadcrumbs, half the Parmesan, half the garlic, the oregano, half the salt and half the black pepper. Roll into about 24 small meatballs and set them on the sheet pan.
- Bake the meatballs for 12 to 15 minutes, until they reach 165°F (74°C) inside. Leave the oven on.
- Meanwhile, bring the water to a boil in a large pot. Add the rigatoni and cook 2 minutes less than the package says; add the broccoli for the last 2 minutes. Drain.
- While the pasta cooks, warm the olive oil in a large oven-safe skillet over medium heat. Cook the onion for 5 minutes until soft, then add the remaining half of the garlic and the tomato paste and stir for 1 minute.
- Add the canned tomatoes, the remaining half of the salt and the remaining half of the black pepper. Simmer for 10 minutes, then stir in half the basil.
- Fold the drained rigatoni, broccoli and meatballs into the tomato-basil sauce in the skillet.
- Scatter the mozzarella and the remaining half of the Parmesan over the top. Bake for 15 minutes, until the cheese is bubbling and golden.
- Rest 5 minutes, then top with the remaining half of the basil and serve.
