- 1 cup chopped16 gFresh cilantrochopped
- 2 cups cut200 gGreen beanscut into 1-inch pieces
- 2 tbsp30 gTomato paste
- 2 tbsp12 gCurry powder
- 2 tsp4 gGround cumin
- ¾ tsp2 gGround turmeric
- ¾ tsp5 gSalt
- 1½ tbsp20 gCanola oil
- 2 tbsp30 gLime juice
Steps
- Prepare first: chop the onion, mince the garlic, grate the ginger, chop the cilantro, cube the potatoes and cut the green beans.
- Make the kofta: in a bowl, mix the ground turkey with half the garlic, half the ginger, half the cilantro, the cumin and 2 g of the salt. Shape into about 20 walnut-sized balls.
- Heat half the canola oil in a Dutch oven over medium-high heat. Brown the meatballs on all sides, about 6 minutes; they will finish in the sauce. Transfer to a plate.
- Add the remaining half of the canola oil and the onion to the pot; cook over medium heat for 5 minutes until soft. Stir in the remaining half of the garlic and the remaining half of the ginger for 1 minute.
- Stir in the curry powder, turmeric and tomato paste and cook for 1 minute until fragrant.
- Pour in the chicken broth and coconut milk, scraping up the browned bits, then add the potatoes and the remaining 3 g of salt. Bring to a simmer, cover and cook for 12 minutes.
- Return the meatballs to the pot with the green beans. Simmer uncovered for 10 to 12 minutes, until the potatoes are tender and the meatballs reach 165°F (74°C) in the center.
- Stir in the lime juice, then serve topped with the remaining half of the cilantro.
