Toasted Oat Orange Chocolate Muffins

  • 1¾ tsp8 gBaking powder
  • ¾ tsp3 gBaking soda
  • ½ tsp3 gSalt
  • ¾ tsp2 gGround cinnamon

  • ⅓ cup70 gCanola oil
  • 1¼ tsp5 gVanilla extract
  • 2 tsp4 gLemon zest
  • ¾ cup120 gSemisweet chocolate chips

Steps

  1. Heat the oven to 350°F (175°C). Spread 130 g of the oats (most of them) on a baking sheet and toast for 8 to 10 minutes, stirring once, until golden and fragrant; keep the remaining 20 g of oats raw for the tops.
  2. Tip the toasted oats into a large bowl, stir in the orange juice and the Greek yogurt, and let soak for 15 minutes while you prepare the rest.
  3. Raise the oven to 400°F (200°C) and line a 12-cup muffin pan with paper liners.
  4. In a medium bowl, whisk the flour, brown sugar, baking powder, baking soda, salt and cinnamon.
  5. Into the soaked oats, whisk the eggs, canola oil, vanilla and lemon zest until smooth.
  6. Add the flour mixture to the oat mixture and fold just until no dry streaks remain. Fold in 100 g of the chocolate chips.
  7. Divide the batter among the 12 cups. Scatter the remaining 20 g of chocolate chips and the reserved raw oats over the tops.
  8. Bake for 5 minutes at 400°F (200°C), then lower to 350°F (175°C) and bake 12 to 14 minutes more, until domed and a toothpick in the center comes out clean (a little melted chocolate is fine).
  9. Cool in the pan for 5 minutes, then move to a rack and cool at least 10 minutes before serving.
