  • ⅓ cup85 gUnsalted buttermelted and slightly cooled
  • 2 tsp8 gVanilla extract
  • ¾ cup120 gSemisweet chocolate chipsdivided
  • 1 tbsp12 gGranulated sugar

Steps

  1. Preheat the oven to 400°F (200°C) and line a 12-cup muffin tin with paper liners.
  2. Melt the butter and let it cool slightly while you mash the banana in a large bowl.
  3. In a medium bowl, whisk the flour, unsweetened cocoa powder, baking soda, baking powder and salt until no cocoa streaks remain; this is the dry mix.
  4. To the mashed banana, whisk in the brown sugar, egg, buttermilk, melted butter and vanilla until smooth; this is the wet mix.
  5. Pour the dry mix into the wet mix and fold with a spatula until just combined, with a few small floury spots left.
  6. Fold in three-quarters of the chocolate chips.
  7. Divide the batter evenly among the 12 cups, filling them nearly to the top.
  8. Scatter the remaining quarter of the chocolate chips over the tops, then sprinkle the granulated sugar evenly over each muffin for a crackly top.
  9. Bake 5 minutes at 400°F (200°C), then lower the oven to 350°F (175°C) without opening the door and bake 12 to 14 minutes more, until a toothpick in the center comes out clean apart from melted chocolate.
  10. Cool in the tin for 5 minutes, then move the muffins to a rack and cool at least 15 minutes before serving.
