- ½ cup leaves12 gFresh basiltorn
- 1⅓ cups250 gLong-grain white rice, dryrinsed
- 1⅔ cups400 gWater
- ⅛ tsp1 gSalt
Steps
- Prepare all the vegetables, aromatics and chicken first: slice the onion and red bell pepper, cut the broccoli into florets, slice the carrot, trim the snow peas, mince the garlic, grate the ginger and cut the chicken thigh into pieces.
- Cook the rice: bring the water and salt to a boil in a saucepan, add the rice, cover and simmer on low for 15 minutes, then rest off the heat, covered, for 10 minutes.
- Meanwhile, heat half the canola oil in a large pot over medium-high heat. Brown the chicken thigh in one layer, about 5 minutes, then move it to a plate.
- Add the remaining half of the canola oil and the onion to the pot and cook for 4 minutes until soft. Stir in the garlic, ginger, curry powder and turmeric and cook for 1 minute until fragrant.
- Pour in the coconut milk and chicken broth, add the fish sauce and brown sugar, and scrape up the browned bits. Return the chicken and its juices, and simmer for 10 minutes.
- Add the carrot and broccoli and simmer 4 minutes, then add the red bell pepper and snow peas and simmer 3 minutes more, until the vegetables are crisp-tender and the chicken reaches 165°F (74°C).
- Turn off the heat and stir in the lime juice. Fluff the rice, spoon the curry over it and top with the basil.
