Steps
- Bring the water and quinoa to a boil in a small pot, cover, and simmer on low for 15 minutes until the water is absorbed; spread on a plate to cool for 10 minutes.
- Meanwhile, preheat the oven to 425°F (220°C) and brush a sheet pan with half of the olive oil.
- Squeeze the grated sweet potato in a clean towel to remove excess moisture, then add it to a large bowl.
- In the bowl, mash the white beans roughly into the sweet potato with a fork.
- Add the cooled quinoa, red bell pepper, green onion, garlic, egg, flour, cumin, smoked paprika, three-quarters of the salt and the black pepper; mix well.
- Shape the mixture into 8 patties about 1/2 inch thick and set them on the oiled sheet pan; brush the tops with the remaining half of the olive oil.
- Bake for 15 minutes, flip carefully, and bake 12 to 15 minutes more until deeply golden and the center reaches 160°F (71°C).
- While the patties bake, make the topping: gently stir the avocado, tomato, lime juice, cilantro and the remaining quarter of the salt in a bowl.
- Let the patties rest 3 minutes, then serve two per plate, bunless, spooned over with the avocado-tomato salsa.
