Stovetop Cheddar Cheese Dip with Crudités

Ingredients

  • 1 cup (240 ml)240 gMilk, 2%
  • 1 tbsp10 gCornstarch
  • 1 cup shredded120 gCheddar cheeseshredded
  • 2 tbsp30 gCream cheesesoftened
  • 1 tsp5 gYellow mustard
  • ¼ tsp1 gGarlic powder
  • 3½ medium200 gCarrotscut into sticks
  • 4 stalks160 gCelerycut into sticks
  • 2 cups sliced200 gCucumbercut into spears
  • 1⅔ cups florets150 gBroccolicut into small florets

Steps

  1. Prepare the vegetables first: cut the carrot and celery into sticks, the cucumber into spears and the broccoli into small florets, then arrange them on a platter and chill while you make the dip.
  2. Shred the cheddar and set it aside; let the cream cheese soften on the counter.
  3. In a small skillet off the heat, whisk the cornstarch into the milk until no lumps remain.
  4. Set the skillet over medium heat and cook, whisking constantly, until the milk simmers gently and thickens, about 4 to 5 minutes.
  5. Lower the heat to low and whisk in the cream cheese until smooth.
  6. Add the cheddar a handful at a time, whisking until each addition melts before adding more, keeping the dip below a boil so it stays silky.
  7. Whisk in the mustard and garlic powder, then take the skillet off the heat.
  8. Pour the warm dip into a serving bowl and serve right away with the chilled carrot, celery, cucumber and broccoli for dipping.
