Spiced Pumpkin Loaf with Cream Cheese Swirl

Ingredients

  • 1¼ cups300 gPumpkin puree, canned
  • 1¾ cups220 gAll-purpose flour
  • ⅔ cup packed150 gBrown sugarpacked
  • ⅓ cup60 gGranulated sugardivided
  • ⅓ cup90 gCanola oil
  • 2 large100 gEggsroom temperature
  • ½ cup115 gCream cheesesoftened
  • 1 tsp4 gVanilla extract
  • 1⅛ tsp5 gBaking soda
  • ¾ tsp3 gBaking powder
  • ½ tsp3 gSalt
  • 2 tsp5 gGround cinnamon
  • 1⅛ tsp2 gGround ginger
  • ½ tsp1 gGround nutmeg
  • ¼ tsp0.5 gGround cloves
  • 3 tbsp25 gPumpkin seeds (pepitas)

Steps

  1. Preheat the oven to 350°F (175°C). Grease a 9x5-inch loaf pan and line it with a parchment sling.
  2. Divide the granulated sugar: set aside one third for the swirl and two thirds for the batter.
  3. Make the swirl: beat the softened cream cheese with the one third of the granulated sugar and the vanilla until smooth. Set aside.
  4. In a medium bowl, whisk the flour, baking soda, baking powder, salt, cinnamon, ground ginger, nutmeg and cloves.
  5. In a large bowl, whisk the pumpkin puree, brown sugar, the remaining two thirds of the granulated sugar, the canola oil and the eggs until smooth.
  6. Fold the flour mixture into the pumpkin mixture just until no dry streaks remain.
  7. Spread half of the batter in the pan. Dollop all of the cream cheese swirl over it, then cover with the remaining half of the batter. Drag a knife through in a few S-shapes to swirl.
  8. Scatter the pumpkin seeds over the top.
  9. Bake 60 to 70 minutes, until a toothpick inserted into the cake part (not the swirl) comes out clean; tent with foil after 45 minutes if the top browns quickly.
  10. Cool in the pan on a rack for 15 minutes, lift out with the parchment, and cool completely on the rack, about 1 hour, before cutting into 12 slices. Refrigerate leftovers.

Food safety: Don't taste raw dough or batter: raw flour and raw eggs can carry germs.
