Steps

  1. Set the butter out to soften and bring the egg and buttermilk to room temperature. Preheat the oven to 350°F (175°C) and line a 12-cup muffin pan with paper liners.
  2. Mash the banana in a large bowl until mostly smooth with a few small lumps.
  3. In a medium bowl, whisk the flour, baking soda, baking powder, salt and cinnamon; set this dry mix aside.
  4. Into the mashed banana, whisk the brown sugar, egg, canola oil, buttermilk and half of the vanilla until smooth; save the remaining half of the vanilla for the frosting.
  5. Fold the dry mix into the banana mixture with a spatula just until no dry flour remains.
  6. Divide the batter evenly among the 12 liners, filling each about three-quarters full.
  7. Bake 18–22 minutes, until the tops spring back and a toothpick inserted in the center comes out clean.
  8. Cool the cupcakes in the pan for 5 minutes, then move them to a rack to cool completely, about 45 minutes.
  9. For the frosting, beat the softened butter and peanut butter until creamy, then beat in the powdered sugar, the remaining half of the vanilla and the milk until fluffy.
  10. Spread or pipe the peanut butter frosting over the cooled cupcakes and serve.
