  • 1 whole14 gJalapeñoseeded and minced
  • 1 cup chopped16 gFresh cilantrochopped
  • 2 tbsp30 gLime juice
  • ⅓ cup80 gSour cream
  • 1¼ cups chopped60 gRomaine lettuceshredded
  • 1 tbsp15 gOlive oil
  • 2 tsp4 gGround cumin
  • 1½ tsp4 gChili powder
  • ¾ tsp2 gPaprika (sweet or smoked)
  • ½ tsp3 gSalt

Steps

  1. Put the brown lentils and water in a saucepan, bring to a boil, then simmer uncovered for 20 to 25 minutes until tender; drain any leftover water.
  2. While the lentils cook, make the tomato salsa: stir the tomato, red onion, minced jalapeño, half the cilantro, half the lime juice and one third of the salt in a bowl.
  3. Make the lime sour cream: stir the sour cream with the remaining half of the lime juice in a small bowl.
  4. Heat the olive oil in a large skillet over medium-high heat. Add the frozen corn kernels and cook 4 to 5 minutes until thawed and lightly charred in spots.
  5. Add the diced yellow onion to the skillet and cook 4 minutes until soft, then add the garlic, cumin, chili powder and paprika and stir for 30 seconds.
  6. Add the cooked lentils, the black beans and the remaining two thirds of the salt. Cook 4 to 5 minutes, mashing about a quarter of the beans so the filling holds together; stir in the remaining half of the cilantro.
  7. Wipe out a second skillet or use a clean dry pan and warm the flour tortillas for about 20 seconds per side.
  8. Spoon the lentil filling down the center of each tortilla, top with the romaine, the tomato salsa and the lime sour cream, fold in the sides and roll up tightly.
