Ingredients
- 4 cups480 gWhole wheat flour
- 1⅓ cups180 gBread flour
- 1¼ cups (300 ml)300 gButtermilk, low-fatwarmed to about 100°F (38°C)
- ⅔ cup160 gWaterlukewarm, about 100°F (38°C)
- 2 large100 gEggs1 for the dough, 1 beaten for the egg wash
- 3 tbsp40 gCanola oil
- 2 tbsp40 gMaple syrup
- 2¼ tsp9 gInstant yeast
- 2 tsp12 gSalt
- 1½ tbsp15 gSesame seeds
Steps
- In a large bowl, whisk the whole wheat flour, bread flour, instant yeast and salt to make the dry mix.
- In a second bowl, whisk the warm buttermilk, lukewarm water, canola oil, maple syrup and one of the eggs (half the egg total). Beat the other egg in a small cup and refrigerate it for the wash.
- Pour the buttermilk mixture into the dry mix and stir into a shaggy dough. Rest 15 minutes so the whole wheat bran softens. The dough is about 80% hydration counting the buttermilk and water against the whole wheat flour and bread flour together, with about 1.8% salt.
- Knead 8 to 10 minutes by hand or 6 minutes in a stand mixer until smooth, slightly tacky and stretchy.
- Cover and let rise at about 75°F (24°C) for 60 to 75 minutes, until doubled in size.
- Divide the dough into 12 equal pieces of about 110 g. Shape each into a tight ball, set on a parchment-lined sheet pan about 2 inches apart, and press each flat to about 3 1/2 inches wide.
- Cover loosely and proof at about 75°F (24°C) for 40 to 50 minutes, until puffy and a gentle poke springs back slowly. Meanwhile, preheat the oven to 375°F (190°C).
- Brush the buns with the reserved beaten egg and sprinkle with the sesame seeds.
- Bake 18 to 22 minutes, until deep golden and 190°F (88°C) in the center.
- Cool the buns on a rack at least 30 minutes before slicing.
