Ingredients
- 1 cup140 gDry-roasted peanuts, unsalted
- ½ cup60 gPumpkin seeds (pepitas)
- 2¼ tsp10 gCanola oil
- ¼ tsp2 gSalt
Steps
- Use a powerful blender or food processor that can handle thick nut butters, and make sure it is completely dry.
- Add the pumpkin seeds to the blender and blend for about 30 seconds until finely ground.
- Add the peanuts and blend on low, then medium, for about 1 minute until the mixture looks like damp sand.
- Keep blending in 1-minute bursts, scraping down the sides between bursts, for 6 to 10 minutes total, until the nuts and seeds release their oil and turn into a smooth paste; rest the motor if it feels warm.
- With the blender running, drizzle in the canola oil and blend 1 to 2 minutes more until silky and spreadable.
- Add the salt and blend 30 seconds to mix it in evenly.
- Scrape the peanut-pepita butter into a clean jar and serve with apple slices, celery or toast. Store covered in the fridge for up to 3 weeks and stir before using.
