Steps
- Prepare first: peel and cube the sweet potato, dice the onion and bell pepper, mince the garlic, chop the cilantro, and drain the black beans.
- Make the yogurt-lime sauce: in a small bowl, stir the Greek yogurt with half of the lime juice, half of the cilantro and a small pinch (about a quarter) of the salt. Refrigerate until serving.
- Heat the olive oil in a large skillet over medium heat. Add the sweet potato and cook 5 minutes, stirring now and then.
- Add the onion and bell pepper and cook 4 minutes until softened.
- Push the vegetables aside, add the ground turkey and cook, breaking it up, until browned, about 6 minutes.
- Stir in the garlic, cumin, smoked paprika, chili powder, oregano and the remaining salt; cook 1 minute until fragrant.
- Add the black beans and the water, cover and simmer 5 to 7 minutes until the sweet potato is tender and the turkey reaches 165°F (74°C).
- Uncover, stir in the remaining half of the lime juice and the remaining half of the cilantro, and take the skillet off the heat.
- Warm the flour tortillas one at a time in a dry skillet, about 20 seconds per side.
- Spoon a quarter of the filling down the center of each tortilla, add a spoonful of the yogurt-lime sauce, fold in the sides and roll up burrito style. Serve with the rest of the sauce.
