Smoky Turkey Cheddar Double Smash Burgers

Ingredients

  • 1¼ lb560 gGround turkey, 93% lean
  • 1¾ tsp4 gPaprika (sweet or smoked)smoked
  • 1 tsp3 gGarlic powder
  • 1 tsp2 gGround cumin
  • ½ tsp3 gSalt
  • ½ tsp1 gBlack pepper
  • 2¼ tsp10 gCanola oil
  • ½ cup shredded60 gCheddar cheesethinly sliced into 4 pieces
  • 8 slices256 gWhole-wheat bread8 slices, standing in for burger buns
  • 1½ tbsp20 gYellow mustard
  • 1⅔ cups chopped80 gRomaine lettuceleaves torn to bread size
  • 2 medium246 gTomatoessliced into rounds
  • 1 medium110 gYellow onionsliced into thin rings

Steps

  1. Prepare the toppings first: tear the romaine, slice the tomato into rounds and cut the onion into thin rings; set them aside.
  2. In a small bowl, stir together the smoked paprika, garlic powder, cumin, salt and black pepper to make the spice mix.
  3. Divide the ground turkey into 8 loose balls of about 70 g each; keep them cold until cooking.
  4. Heat a large cast-iron skillet over medium-high heat. Toast the bread slices in the dry skillet until golden, about 1 minute per side, and set aside.
  5. Add half the canola oil to the hot skillet. Place 4 turkey balls in the pan, press each very flat with a sturdy spatula, and sprinkle the tops with half the spice mix.
  6. Cook until the edges are deeply browned and crisp, about 3 minutes, then flip. Lay 2 cheddar pieces each on 2 of the patties, cook 2 to 3 minutes more until the turkey reaches 165°F (74°C), and move them to a plate.
  7. Add the remaining half of the canola oil, smash the last 4 turkey balls, season with the remaining half of the spice mix, and cook the same way, topping 2 of them with the remaining cheddar, until they reach 165°F (74°C).
  8. Spread the mustard on 4 toasted bread slices. Stack a plain patty and a cheddar patty on each, then top with the romaine, tomato and onion, close with the remaining bread slices and serve hot.
