- 1¾ tsp4 gPaprika (sweet or smoked)

- ½ tsp3 gSalt
- ½ tsp1 gBlack pepper

- 1 whole200 gAvocadodiced

- ½ cup chopped8 gFresh cilantrochopped
- ½ lime, juiced22 gLime juice
Steps
- Preheat the oven to 425°F (220°C) and line two sheet pans with parchment.
- Toss the sweet potato with one third of the olive oil and spread on one pan; roast 15 minutes while you make the patties.
- Heat another third of the olive oil in a skillet over medium-high heat; cook the mushrooms and onion 6–7 minutes until browned and dry, adding the garlic for the last minute. Let cool slightly.
- In a bowl, mash the pinto beans coarsely. Stir in the mushroom mixture, oats, egg, paprika, cumin, half of the salt and the black pepper. Rest 5 minutes so the oats absorb moisture.
- Shape the bean mixture into 4 patties about 3/4 inch thick, place on the second pan and brush the tops with the remaining olive oil.
- Flip the sweet potato and bake both pans 20 minutes, turning the patties halfway, until the patties are crisp at the edges and reach 160°F (71°C) in the center and the sweet potato is tender.
- Meanwhile, gently combine the avocado, tomato, cilantro, lime juice and the remaining half of the salt for the salsa.
- Arrange the sweet potato rounds on plates, set a patty on each and spoon the avocado-tomato salsa on top.
