  • 1 tsp2 gGround cumin
  • ½ tsp1 gBlack pepper
  • ¼ tsp1.5 gSalt

  • 2 tsp10 gLemon juice

Steps

  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment.
  2. Heat half of the olive oil in a skillet over medium-high heat. Add the mushrooms and onion and cook 8 minutes, until browned and dry. Stir in the garlic, tomato paste, smoked paprika and cumin and cook 1 minute; let cool for 5 minutes.
  3. In a large bowl, mash the kidney beans with a fork, leaving some pieces whole. Add the mushroom mixture, soy sauce, black pepper, salt, oats and egg and mix well. Let it stand 5 minutes so the oats absorb moisture.
  4. Shape the mixture into 4 patties about 3/4 inch thick and set them on the baking sheet. Brush the tops with the remaining half of the olive oil.
  5. Bake 12 minutes, flip carefully, and bake 10 to 12 minutes more, until crisp outside and 160°F (71°C) in the center.
  6. While the patties bake, toss the avocado slices with the lemon juice, and toast the whole-wheat bread.
  7. Set each patty on a slice of toast, top with avocado and tomato, and close with a second slice of toast.
