  • 3¼ cups (770 ml)800 gWhole milk
  • 1½ medium300 gPearspeeled and diced
  • ¼ cup25 gUnsweetened cocoa powder
  • ¼ cup packed55 gBrown sugar
  • ½ tsp1 gGround cinnamon
  • ⅛ tsp1 gSalt
  • 1¼ tsp5 gVanilla extract
  • ¼ cup40 gSemisweet chocolate chipsroughly chopped

Steps

  1. Lightly grease the slow-cooker insert. Peel and dice the pear, rinse the rice in a sieve until the water runs mostly clear, and roughly chop the chocolate chips; set the chocolate aside for the topping.
  2. Measure out about a cup of the whole milk into a bowl. Add the unsweetened cocoa powder, brown sugar, cinnamon and salt, and whisk until smooth and lump-free. This is the cocoa mixture.
  3. Add the rice and the rest of the whole milk to the slow cooker, then pour in the cocoa mixture and stir well. Stir in half of the diced pear.
  4. Cover and cook on low for 2 1/2 to 3 hours, stirring once an hour, until the rice is tender and the pudding is thick but still loose.
  5. Turn off the slow cooker and stir in the vanilla and the remaining half of the diced pear.
  6. Spoon the pudding into 4 dishes, press plastic wrap onto the surface, and chill for at least 2 hours until cold and set; it thickens as it cools.
  7. Just before serving, scatter the chopped chocolate chips over each pudding.
