Skillet Maple Pecan Quinoa Nut Crunch

Ingredients

  • ¾ cup chopped90 gPecansroughly chopped
  • ½ cup whole60 gAlmondsroughly chopped
  • ¼ cup30 gPumpkin seeds (pepitas)
  • ¼ cup40 gQuinoa, dryrinsed and patted very dry
  • ⅔ cup50 gOld-fashioned rolled oats
  • 2 tbsp30 gAlmond butter, no salt addedstirred well
  • 2 tbsp45 gMaple syrup
  • 1¾ tsp8 gCanola oil
  • 1 tsp4 gVanilla extract
  • ¾ tsp2 gGround cinnamon
  • ½ tsp1 gGround ginger
  • ⅛ tsp1 gSalt
  • ¼ cup35 gRaisins

Steps

  1. Before heating anything, chop the pecans and almonds, rinse the quinoa and pat it very dry on a towel, and line a tray with parchment for cooling.
  2. In a small bowl, whisk the almond butter, maple syrup, vanilla, cinnamon, ground ginger and salt into a smooth glaze. Set it aside.
  3. Set a large dry skillet over medium heat. Add the quinoa and toast, shaking the pan, for 4 to 5 minutes until it crackles and turns golden. Tip it into a bowl.
  4. Lower the heat to medium-low and add the canola oil to the skillet. Add the pecans, almonds, pumpkin seeds and oats and toast, stirring often, for 5 to 6 minutes until fragrant.
  5. Return the toasted quinoa to the skillet, pour in the almond butter glaze and stir until the nuts, seeds, oats and quinoa are evenly coated.
  6. Cook, stirring every minute, for 4 to 6 minutes until the mixture looks dry and deep golden; lower the heat if the maple darkens too quickly.
  7. Spread the mixture on the lined tray, press it into an even layer and let it cool completely, about 20 minutes, so it crisps.
  8. Break the cooled crunch into pieces and toss in the raisins. Store airtight for up to 2 weeks.
