  • 1 lb500 gTop sirloin steakpatted dry
  • 1¾ lb800 gDiced tomatoes, canned
  • 2 tbsp30 gTomato paste
  • 5 cloves15 gGarlicminced
  • 2 tbsp25 gOlive oil
  • 1 cup leaves24 gFresh basiltorn
  • 1 tsp1 gDried oregano
  • ½ tsp1 gCrushed red pepper
  • ⅓ cup grated30 gGrated Parmesan
  • 1 tsp6 gSalt
  • ¾ tsp2 gBlack pepper

Steps

  1. Before cooking, mince the garlic, tear the basil, pat the top sirloin steak dry, and season the top sirloin steak on both sides with half of the salt and half of the black pepper.
  2. Bring the water to a boil in a large pot for the pasta.
  3. Heat half of the olive oil in a large skillet over medium-high heat. Sear the top sirloin steak 3 to 4 minutes per side until it reaches 145°F (63°C), then move the top sirloin steak to a board to rest at least 3 minutes.
  4. Lower the heat to medium and add the remaining half of the olive oil to the skillet. Cook the garlic, oregano and red pepper flakes for 1 minute, then stir in the tomato paste and cook 1 minute more.
  5. Add the canned diced tomatoes, the remaining half of the salt and the remaining half of the black pepper. Simmer 12 minutes, scraping up the browned bits, until thickened.
  6. Meanwhile, cook the pasta in the boiling water until al dente, about 10 minutes. Scoop out a cup of the pasta cooking water, then drain the pasta.
  7. Toss the pasta into the sauce with half of the basil, adding splashes of the reserved pasta cooking water until glossy.
  8. Slice the rested top sirloin steak thinly across the grain. Divide the noodles among 4 bowls and top each with the sliced top sirloin steak, the Parmesan and the remaining half of the basil.
