- 12⅔ cups3,000 gWater
- 12 oz340 gPasta, drylinguine
- ½ cup120 gPart-skim ricotta
- 2 tbsp30 gLemon juice
- ½ tsp1 gCrushed red pepper
- 5 cups loosely packed150 gBaby spinach
- ¼ cup chopped15 gFresh parsleychopped
Steps
- Preheat the oven to 425°F (220°C) and line a large sheet pan with parchment.
- Toss the bell pepper, onion and garlic with half of the olive oil on the pan. Roast for 15 minutes.
- Meanwhile, rub the salmon with the remaining half of the olive oil, then season it with the paprika, half of the salt and the black pepper.
- Push the vegetables to the sides, place the salmon in the center and roast 12 to 15 minutes more, until the peppers are charred at the edges and the salmon flakes easily and reaches 145°F (63°C).
- While the salmon roasts, bring the water to a boil in a large pot with the remaining half of the salt. Cook the pasta until al dente, then scoop out 1 cup of the cooking water and drain the pasta in a colander.
- Transfer the roasted bell pepper, onion and garlic to a blender with the ricotta, lemon juice, red pepper flakes and half of the reserved pasta water. Blend until smooth.
- Return the empty pot to low heat, add the spinach and stir until just wilted, about 1 minute. Add the drained pasta and the pepper sauce, tossing and adding the remaining reserved pasta water a splash at a time until glossy.
- Flake the salmon into large pieces and fold it gently into the pasta. Serve sprinkled with the parsley.
