Roasted Garlic Butternut Pizza Sauce

Ingredients

  • 2½ cups cubed350 gButternut squash, peeledcut into 1-inch cubes
  • 12 cloves36 gGarlicwhole cloves, peeled
  • 1 medium110 gYellow onioncut into wedges
  • 1½ tbsp20 gOlive oil
  • ¾ tsp1 gDried rosemary
  • ⅓ cup90 gWater
  • 1½ tsp8 gApple cider vinegar
  • ¼ tsp0.5 gCrushed red pepper
  • ¼ tsp2 gSalt
  • ¼ tsp0.5 gBlack pepper

Steps

  1. Heat the oven to 425°F (220°C) and line a rimmed baking sheet with parchment.
  2. Toss the butternut, garlic and onion on the sheet with half the olive oil and the rosemary; spread in one layer, tucking the garlic cloves among the squash so they don't scorch.
  3. Roast 30 to 35 minutes, stirring once halfway, until the squash is very tender and browned at the edges and the garlic is soft and golden.
  4. Let the vegetables cool on the sheet for 5 minutes, then scrape them into a blender.
  5. Add the water, cider vinegar, red pepper flakes, salt, black pepper and the remaining half of the olive oil to the blender.
  6. Blend until smooth and thick enough to spread; if it's too stiff, blend in a splash more of the water.
  7. Spread on pizza dough before adding toppings, or cool and refrigerate in a covered jar for up to 4 days.
