Peach Green Tea with Coconut Cream Float

Ingredients

  • 1½ cups (350 ml)360 gBrewed green teachilled
  • 1 medium150 gPeachesthinly sliced
  • ⅓ cup80 gCoconut milk, cannedwell shaken and chilled
  • 2½ tsp16 gMaple syrup
  • 2 tsp10 gLime juice
  • 1½ tbsp leaves2 gFresh basilleaves torn

Steps

  1. Brew and chill the green tea ahead of time so it is cold before you begin.
  2. Divide the peach slices in half: set aside a few slices from one half for garnish, then put the rest of the peach slices in a large jar or pitcher.
  3. Add the maple syrup, lime juice and torn basil to the jar and muddle gently until the peach slices break down and release their juice.
  4. Pour the chilled green tea into the jar, stir well, and let it sit for 2 minutes so the peach and basil flavor the tea.
  5. In a small jar, shake or whisk the coconut milk for about 30 seconds until slightly frothy.
  6. Fill two glasses with ice, then pour half the peach green tea into each glass, letting the muddled fruit fall in.
  7. Spoon half the frothed coconut milk over each glass so it floats on top, tuck in the reserved peach slices, and serve right away.
